Winemaking: Direct Press. Bottle refermented. 4 atmospheres almost like a Spumante.

Sulphur: No Sulphur added

Tasting Notes: Cranberries and Strawberries, herbaceous, citrusy, mineral, medium body and lots of acidity.

Pairings: Tortellini in brodo, eggs with white truffles, ravioli burro e salvia.
