Soil: Sant’Agata dei Fossili Marls. Similar to Barolo and Barbaresco.

Winemaking: 4 weeks maceration in cement tanks. Unfiltered. 1 year in cement.

Sulphur: Sulphur is never used.

Tasting Notes: Ripe earthy cherry, leathery fruit. Full bodied, Medium acidity, rich tannins.

Pairings: Grilled meat, meat stews, bollito misto, tagliatelle ai funghi.
